Union Minister Dr. Jitendra Singh is spearheading efforts to revolutionize ‘Kaladi’, the celebrated GI-tagged dairy treat from Jammu and Kashmir’s Udhampur. In a focused meeting, he mandated large-scale development that upholds its genuine taste, supple texture, and health benefits, paving the way for use in multifarious dishes.
Leveraging the ‘One District One Product’ program, the focus is on value enhancement and prolonging shelf life for broader market penetration. Dr. Singh stressed that no modernization should erode Kaladi’s core identity, particularly its short shelf life that hampers exports.
Experts from CSIR-CFTRI Mysuru and IIIM Jammu received clear instructions to partner on R&D for better nutrition, superior quality, and extended freshness through smart processing techniques. ‘Preserve the stretchy, milky charm that makes it Jammu’s answer to mozzarella,’ he urged.
Crafted from pure full-fat milk, Kaladi’s GI status has invigorated local economies, empowering rural youth with livelihoods. The project includes cataloging diverse regional recipes to create scalable, industry-ready standards.
As initial findings roll in soon and full reports in half a year, Kaladi stands poised for a culinary renaissance, merging heritage with high-tech to delight palates worldwide.
